Characterized by a very fine dark brown powder and a delicate aroma, organic cocoa powder has a bitter and decisive taste, free from extraneous tastes. A gelatinous maximum containing the seeds and pulp is extracted from the cocoa fruits, which is then left to ferment in special tanks to sweeten the seeds and allow their typical aroma to fully develop. The seeds are then subjected to drying, roasting and decortication. Then follow the grinding and squeezing that allow us to obtain organic cocoa powder.
