Uses in the kitchen

In the kitchen, loose organic rye grains are ideal as a healthy ingredient for soups and stews. Used to enrich salads with organic vegetables and legumes. Also excellent for giving texture to mixtures of meatballs, vegan burgers or to stuff baked organic vegetables.

The cooking of loose organic rye grains requires a period of soaking in water after careful washing. After the soaking period, put the organic rye grains in a pot with water equal to about 3 times their volume and bring to the boil over a high flame. It is advisable to add salt when boiling and lower the heat, keeping it rather moderate for the entire time necessary for cooking, for about 45 minutes, when the water is completely absorbed by the grains. It is preferable to cook by covering with a lid.

Organic rye grains are very rich in nutritional properties, in mineral salts such as iron and potassium and in group B vitamins and fibres. In addition, it is a low glycemic index carbohydrate, low in calories and high in energy value.
